Goals To teach acetic acid fermentation, vinegar production methods and production of vine leaves in brine.
Course Content Alcohol fermentation, acetic acid fermentation, vinegar production methods, types of vinegar, procedures applied to vinegar, brine preparation and production of vine leaves in brine.
Learning Outcomes 1) To be able to know the different techniques of vinegar making.
2) To be able to explain alcohol fermentation and acetic acid fermentation
3) To be able to prepare brine with the desired value of baume.
4) To be able to make vine leaves in brine.
